TIKUSAN Sawara Cypress Hangiri — Wooden Sushi Rice Mixing Tub (30cm)
Product description
This hangiri is produced by Japanese craftsmen and built from Sawara cypress, a fragrant, fine-grained timber prized for sushi tubs. The wood soaks up just enough moisture from hot rice so grains remain plump without becoming soggy, and its scent pairs nicely with vinegar during preparation. Reinforcing the staved body are solid copper bands that hold the tub firmly together.
Intended for mixing steamed rice with sushi vinegar, the wide, flat bottom makes it easy to fan and fold the rice for quick, even cooling. You can also use it as a serving bowl for chirashi or other rice dishes. Before each use moisten the interior to reduce sticking; initial seasoning with water (and optionally a little vinegar) helps the wood settle and perform best.
Dimensions for this listing are Diameter: 11.8" (30 cm) and Depth: 3.5" (8.8 cm). The piece is made in Japan and should be washed by hand only — it is not dishwasher-safe. Over time the fine grain of Sawara helps prevent shrinking after drying if cared for properly.
Occasionally a sticky, glue-like residue may appear on new cypress—this is natural tree resin that can be released in warm conditions. It is harmless to people and can be removed with washing. Copper fittings may darken or develop patina during shipment or use; this changes appearance but not safety or function. Note that size choices are intended as a guideline: 27 cm fits roughly 2–3 people, 30 cm fits 3–4, and 33 cm fits 4–5.
Pros
- Authentic Sawara cypress construction
- Copper bands for sturdy assembly
- Wide flat base for even cooling
Cons
- Requires hand washing and periodic care
- May exude natural resin in warm weather
- Copper can darken or patina over time
VerdictA traditionally made hangiri that performs well for home sushi preparation. The Sawara cypress body and copper hoops combine authentic aroma and strength. It needs basic wood care but rewards with better-textured rice and attractive presentation.

Great look and material
No complaints about quality. I had assumed a lid was included from other listings, but this one has no lid — I’ll hunt for a cover. Otherwise it performs well for my rice prep.

Solid, traditional hangiri
Well built with a clean wood finish and authentic copper banding. It helps cool and mix rice more evenly than a regular bowl. Needs proper wood care, but looks and feels like it will last.

Disappointed — size and quality issues
Size is about 6 cm smaller than advertised. I question whether this is true cypress and if it was really made in Japan; workmanship feels poor and wood quality seems low.

Description mismatch
Product does not match the listing: different pale wood and only 27 cm instead of 33 cm.

Keeps rice fresh and looks great
More expensive than many options but worth it. It’s genuine cedar-like wood from Japan and performs as claimed — rice stays right for longer, which is helpful if you take extra time rolling sushi.

Wrong size delivered
Item listed as 33 cm but received a 27 cm tub instead.

Cools rice quickly and evenly
The wide, flat bottom spreads rice for faster cooling and easier blending of vinegar. The wood soaks up extra moisture, keeping rice fluffy. This 13" ish size handles 1–3 cups uncooked well; larger batches may need a bigger tub. Requires initial seasoning and wetting before each use.

Essential prep bowl
Make sure to season and prepare the bowl before first use (guides online). Very solid construction and ideal for a single batch; clean and store carefully.

Fell apart after a few uses
Very disappointed — it started to come apart. I’m switching back to using a glass dish.
