Haven't used this one yet
I haven't used the thermophilic packets yet but made Gouda with the mesophilic culture — it's nearly ready. Easy to follow if you hit the temps exactly. Tried mozzarella once; my milk was too warm so it wouldn’t stretch.

Bring muslin for success
Everything arrived as described. Follow the instructions closely or the batch can fail. Use muslin rather than loose cheesecloth for best results.
