Alma Gourmet Pecorino Romano D.O.P. — Aged Sheep’s Milk Hard Cheese Block (2–2.5 lb)
Product description
Authentic D.O.P. Pecorino Romano: This cheese is produced in Italy under D.O.P. regulations and follows time-honored shepherding and cheesemaking traditions to ensure genuine origin and flavor.
Sheep’s milk, aged 18 months: Made entirely from sheep’s milk and matured for approximately 18 months, the wheel develops a firm, dense body with a crumbly texture and a sharp, savory-salty taste profile.
Traditional black rind and wheel-cut wedge: The piece is presented as a wedge cut from a full wheel, retaining the classic black rind typical of Pecorino Romano. Its texture makes it well suited for grating, shaving, or breaking into chunks for a platter.
Large imported wedge, vacuum-sealed: Offered as a generous 2 to 2.5 lb wedge, the cheese is vacuum-sealed to help maintain freshness during storage and handling. Ideal for professional kitchens, home chefs, and enthusiasts who use hard grating cheeses frequently.
Culinary uses: Use this Pecorino for grating over spaghetti, Cacio e Pepe, lasagna, soups, baked pasta dishes, and risotto. It also provides a robust option for charcuterie boards and can be shaved or crumbled into salads and sauces.

Delicious and hard to find locally
Excellent taste — Pecorino isn’t easy to locate at nearby markets, so this was a welcome find.

Genuine Romano — would like a grated option
I adore this Pecorino; it’s the genuine article. I’d buy it more often if a ready-grated version were available, as the quality makes it worth keeping on hand.

Authentic wedge arrived cool but packaging could improve
Received two large wedges totaling 2.30 lbs, each with a fair amount of black waxed rind; the pieces were shrink-sealed together in heavy plastic. The parcel came inside a silver insulated envelope with three food-grade cold packs that had melted but still felt slightly cool; the envelope itself wasn't cold, though the cheese was cool to the touch. Given the cooling situation I’m considering whether ordering directly from the producer might change transit speed or handling. Main drawback is the cost vs. value.

Arrived warm and spoiled — disappointing delivery
It spent many days in transit and when it arrived the two gel packs were leaking inside an aluminum wrapper. The cheese was warm and spoiled on arrival in very hot weather. A nice cut, wasted by poor shipping.

Very flavorful but quite salty; packaging concerns
Really enjoy the flavor, though it’s saltier than I expected for a Romano style. I wouldn’t want this sent in very hot weather. It arrived wrapped in foil-lined bubble wrap with a single small ice pack that was mostly thawed but still cool. The wedge was simply placed in a bag that wasn’t fully sealed — the outer foil wrap and the courier bag kept it safe, but a vacuum seal would be better. Packaging left me worried about damage in transit.
