Last week, I began experimenting with eating more, striving to understand just how much extra nourishment my body truly needed. My focus has been on incorporating wholesome foods rich in essential nutrients that not only provide sustained energy but also keep me feeling full and satisfied throughout the day. Water helps with everything from nutrient transport and regulating body temperature to maintaining a healthy milk supply. Dehydration can quickly lead to fatigue, which is the last thing a new mom needs.
To ensure I’m getting enough fluids, I keep a water bottle close by throughout the day. Sometimes, I’ll even add a slice of lemon or cucumber for a refreshing twist. Remember, staying well-hydrated is a non-negotiable part of postpartum recovery and a healthy breastfeeding diet.

A.M. SMOOTHIE: A NUTRIENT POWERHOUSE FOR BUSY MORNINGS
With my son back in school, my mornings have shifted. I’m up earlier to prepare his breakfast and lunch, which often means my own breakfast gets pushed back. To bridge this gap and ensure I’m getting vital nutrients first thing, I’ve reintroduced my beloved morning smoothies. They are a fantastic way to pack a punch of vitamins, minerals, and healthy fats into a convenient, drinkable meal.
My all-time favorite is a vibrant Mango Spinach Smoothie. It’s a delightful blend of almond milk, a generous handful of fresh spinach, frozen mango chunks, half a banana, a tablespoon of creamy almond butter, and a tablespoon of ground flaxseed. This combination isn’t just delicious; it’s a nutritional powerhouse. Spinach provides iron and Vitamin K, crucial for energy and bone health. Mango and banana offer natural sweetness and essential vitamins. Almond butter delivers healthy fats and protein for satiety, while flaxseed adds omega-3 fatty acids and fiber, supporting digestion and overall well-being. This smoothie is not only quick to prepare but also provides sustained energy to tackle the morning’s demands.

BREAKFAST: BALANCED AND SATISFYING
For breakfast, I typically rotate between hearty oatmeal and protein-packed eggs, ensuring variety and comprehensive nutrition. Today, I opted for a savory combination: two perfectly cooked eggs alongside sautéed spinach, and some delicious leftover crispy sweet potatoes and steak from last night’s dinner. To round out the meal, I enjoyed a slice of toasted Rudi’s bread. This bread, which was part of our recent Amazon Fresh delivery, truly impressed me with its delightful texture – substantial yet not overly heavy. It’s a great choice for a whole-grain option.

I also tried a new coffee creamer, but I still much prefer the homemade version I shared in my previous post, emphasizing my preference for clean, simple ingredients.

My go-to a.m. snack was another slice of toasted Rudi’s bread, generously spread with almond butter and topped with fresh, juicy strawberries. This simple yet satisfying snack provides a fantastic combination of complex carbohydrates for energy from the toast, healthy fats and protein from the almond butter for satiety, and a burst of vitamins and antioxidants from the strawberries.
Alongside my snack, I enjoyed some reheated coffee from the morning. As a sleepless mama, finishing my morning coffee in one go is a rare luxury. This particular cup was reheated not once, but twice, and every precious drop was deeply appreciated. It’s a relatable struggle for many parents, and finding moments for these small comforts, even if slightly delayed, can make a big difference. Other great a.m. snack options could include a handful of nuts and a piece of fruit, or Greek yogurt with berries.

AFTERNOON SNACK: THE CONVENIENCE OF WHOLESOME BARS
My lunch ended up being super late today, as I got carried away with meal prepping (more on that below!). In moments like these, having a quick, convenient, and healthy option on hand is absolutely essential. That’s where RxBars have become an absolute lifesaver. I’m usually not a fan of most protein bars, as many are packed with artificial ingredients and added sugars. Honestly, I wish I had the time to do this every week, but when I do, it’s an absolute game-changer. Having lunch ready to go for two straight days has been incredibly convenient and stress-reducing.
My meal prep strategy for these delicious and filling bowls began with cooking about 2 cups of quinoa in chicken broth, which infuses it with extra flavor. Quinoa is a fantastic choice as it’s a complete protein and rich in fiber, making it incredibly satisfying. Next, I caramelized two large white onions in a combination of 1 ½ tablespoons of butter and 2 tablespoons of olive oil until they were beautifully golden and sweet. I mixed about half of the cooked quinoa with these luscious caramelized onions, keeping the remaining quinoa plain for versatility. The next step involved roasting a vibrant assortment of vegetables: broccolini, sweet potatoes, beets, eggplant, bell peppers, and mushrooms. These were tossed with plenty of olive oil, salt, and pepper, then roasted at 425 degrees F for approximately 20-30 minutes until tender and slightly crispy. Alongside the vegetables, I roasted a slab of salmon, packed with essential omega-3 fatty acids crucial for both maternal and infant health.
I enjoyed a bowl yesterday for lunch, accompanied by kombucha for gut health, and today’s lunch was just as delightful. This meal is super tasty, incredibly filling, and far from dry. The combination of protein, complex carbohydrates, and a rainbow of vegetables ensures a balanced and nutrient-dense meal that supports sustained energy throughout the afternoon. Meal prepping like this means I don’t have to think about what to eat when hunger strikes, reducing the temptation to reach for less healthy options. We enjoyed roasted salmon with a flavorful herb crust topping, perfectly complemented by tender roasted asparagus. To ensure everyone had plenty to eat, I made a generous batch of quinoa for dinner and intentionally roasted extra vegetables. This strategy not only ensures a balanced meal for the present but also provides components for future quick meals, extending the benefits of meal prep even to evening cooking.
The family heartily approved of dinner, with the exception of a few roasted vegetables that the kids weren’t particularly fond of – which, of course, just meant more for me! Incorporating lean protein like salmon, rich in omega-3 fatty acids, alongside fiber-filled asparagus and complex carbohydrates from quinoa, creates a well-rounded meal that supports energy, recovery, and overall health for the entire family. Making healthy eating a family affair, even if some picky eaters require a little gentle encouragement, is a rewarding aspect of postpartum nutrition.

EVENING SNACK: A SIMPLE SOLUTION FOR EXHAUSTION
As the day wound down, and the exhaustion of new parenthood truly set in, I reached for another RxBar for my evening snack. Sometimes, you’re just too tired to even think about making anything else, and that’s perfectly okay. Having a pre-portioned, nutrient-dense snack readily available prevents reaching for less healthy, high-sugar options driven by fatigue and convenience.
