  4. Deglaze & Simmer: Stir in chicken stock, fresh lime juice, lime zest, honey, and red pepper flakes. Bring to a gentle simmer, scraping up any browned bits from the pan. Continue to simmer for 3-4 minutes, until the mixture has reduced by half. Maintain a gentle simmer to concentrate flavors.
  5. Add Coconut Milk: Stir in the unsweetened full-fat coconut milk. Season the sauce with salt and pepper to taste. Simmer for 4-5 minutes, stirring occasionally, until the sauce has reduced and thickened to a creamy consistency.
  6. Finish Chicken: Return the seared chicken cutlets to the pan, nestling them into the sauce. Continue to cook for another 4-5 minutes, or until the chicken is completely cooked through and tender.
  7. Garnish & Serve: Stir in the green parts of the green onions and the fresh chopped cilantro. Serve immediately over hot cooked rice or your preferred accompaniment.

  1. Dairy-Free Option: To make this recipe completely dairy-free, simply substitute the butter with an equal amount of unrefined or virgin coconut oil.
