  • 1/4 cup cilantro leaves
  • 1 chipotle pepper from a can
  • 2 tsp adobo sauce, from the chipotle pepper can
  • 2 tbsp avocado oil
  • 1 tsp chili powder
  • 1 & 1/2 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt, or to taste
  • 2 lbs chicken thighs, boneless and skinless

Instructions

  1. In a blender, combine the Mexican beer, white onion, garlic, cilantro, chipotle pepper, adobo sauce, avocado oil, chili powder, cumin, and oregano. Blend until the mixture is completely smooth and forms a vibrant marinade.
  2. Transfer your boneless, skinless chicken thighs to a large bowl or a sealable zip-top bag. Pour the prepared marinade mixture over the chicken, ensuring all pieces are thoroughly coated. Gently toss to distribute the marinade evenly. Allow the chicken to marinate in the refrigerator for a minimum of 3 hours, or ideally, for 6-8 hours for maximum flavor infusion.

At this stage, you may add an additional 1/2 tsp of salt or season to your taste preference.
