Gathering Your Ingredients: What You’ll Need for Authentic Greek Flavors

The beauty of these Greek Salad Skewers lies in their simplicity and the quality of their fresh, core ingredients. With just four main components, plus our signature Greek vinaigrette, you’ll create a dish that’s bursting with authentic Mediterranean taste. Choosing fresh, high-quality produce and feta is key to achieving the best flavor and texture for your skewers.

  • Tomatoes: For these skewers, grape tomatoes or cherry tomatoes are your best bet. Look for ones that are firm and not overly ripe. This ensures they hold their shape beautifully when skewered and don’t burst or become mushy. Their natural sweetness perfectly complements the other savory elements.
  • Feta Cheese: To achieve that delightful creamy and moist texture, we highly recommend using feta cheese sold in brine, typically found as a block. Feta in brine retains its moisture better than pre-crumbled varieties, preventing it from drying out quickly. You’ll cut the block into ¾ to 1-inch cubes yourself, allowing for perfect, substantial pieces on each skewer.
  • Olives: Kalamata olives are the quintessential choice for Greek salads, offering a rich, fruity, and slightly tangy flavor that is incomparable. Always opt for pitted Kalamata olives for ease of preparation. If you prefer a milder taste, black olives can also be used, but Kalamata olives truly elevate the authentic Greek profile of this appetizer.
  • Cucumbers: Baby cucumbers, also known as Persian cucumbers, are ideal due to their thin skin and narrow diameter, which allows for perfect ½-inch thick rounds. These cucumbers are crisp and refreshing, adding a delightful crunch. If Persian cucumbers are unavailable, English cucumbers make a good substitute; just be sure to slice them in half (or even quarters, depending on their width) to prevent the slices from being too large or unwieldy on the skewer.
  • Greek Vinaigrette: This homemade vinaigrette is the soul of our Greek salad skewers. It’s incredibly simple yet packed with flavor, and you can easily prepare it days in advance. The recipe, included in the recipe card below, combines robust olive oil, tangy red wine vinegar, bright lemon juice, pungent minced garlic, and aromatic dried oregano. A pinch of salt and pepper rounds out this essential dressing, transforming humble ingredients into a Mediterranean masterpiece.

Beyond the fresh ingredients, you will also need 6-inch bamboo skewers or cocktail party picks to assemble your delectable bites. These are easily found at most grocery stores or online retailers.

Crafting Your Greek Salad Skewers: A Simple Step-by-Step Guide

Making these Greek Salad Skewers is a straightforward and enjoyable process that yields impressive results. Follow these easy steps to bring this vibrant appetizer to life:

Step 1: Whisking the Zesty Vinaigrette

The first step is to prepare our delicious Greek vinaigrette. In a small bowl, combine the olive oil, red wine vinegar, fresh lemon juice, minced garlic, and dried oregano. Whisk vigorously until all ingredients are well combined and the dressing is emulsified. Season generously with kosher salt and freshly ground black pepper to taste. Adjust as needed to achieve your desired balance of tang and seasoning. Once prepared, set the vinaigrette aside at room temperature. This allows the flavors to meld beautifully while you prepare the remaining components of your skewers. The vinaigrette can be made a few days in advance and stored in the refrigerator, allowing for even deeper flavor development.

Step 2: Preparing Your Fresh Produce and Feta

Next, focus on preparing your fresh vegetables and feta cheese. Begin by thoroughly washing and draining your grape or cherry tomatoes. Set them aside in a colander. For the cucumbers, slice them into uniform ½-inch thick rounds. Consistency in size is important for even threading and an appealing presentation. Place the sliced cucumbers aside.

Now, turn your attention to the feta cheese. Carefully remove the block of feta from its brine, but do not rinse it off, as the brine contributes to its moisture and flavor. Place the feta on a clean cutting board. Using a sharp knife, carefully cut the block into ¾ – 1 inch cubes. Aim for pieces that are substantial enough to be easily threaded onto the skewers without breaking, yet small enough for a single bite.

Finally, remove the Kalamata olives from their brine and set them over a colander to drain any excess liquid. Ensure all your ingredients are prepped and ready for assembly, creating an efficient workflow.

Step 3: Assembling Your Mediterranean Masterpieces

With all your ingredients prepped, it’s time for the fun part: assembly! Take one of your 6-inch bamboo skewers and begin threading the ingredients. A suggested order for visual appeal and structural integrity is: one cherry tomato, followed by one feta cube, then an olive, and finally a cucumber slice. Repeat this pattern, perhaps ending with another tomato or feta cube, until your skewer is full but still has a small handle. A common method is to thread one tomato, one feta cube, one olive, and one cucumber slice onto the skewer. You can then add another feta cube if desired, ensuring each skewer offers a balanced taste profile. When threading the feta, it’s helpful to hold it tightly but gently between your fingers to prevent it from cracking or breaking as the skewer passes through. It’s always a good idea to have a few extra feta cubes on hand in case some pieces don’t cooperate.

Carefully transfer each assembled skewer to a serving platter. Continue this process until you have created a total of 12 vibrant skewers. These can be stored in the refrigerator for a short period, typically 1-2 hours, before serving. However, for the freshest taste and best presentation, it’s ideal to serve them immediately after assembly. Right before you are ready to present them, generously drizzle the prepared Greek vinaigrette over all the skewers. The dressing adds a beautiful sheen and a final punch of flavor. If desired, garnish with a sprinkle of fresh minced parsley for an added touch of color and herbaceous freshness, and a final grind of black pepper.

These Greek Salad Skewers are best enjoyed fresh. If you need to prepare them ahead of time, assemble the skewers without the dressing and store them in an airtight container in the refrigerator for up to 1-2 hours. Drizzle with the vinaigrette just before serving to maintain the crispness of the vegetables and prevent the feta from becoming too soft.

Tips for Perfect Greek Salad Skewers Every Time

To ensure your Greek Salad Skewers are nothing short of spectacular, consider these helpful tips:

  • Choose Firm Ingredients: Select firm, fresh tomatoes and cucumbers. Overripe produce can be difficult to skewer and may become mushy quickly.
  • Handle Feta with Care: As mentioned, feta in brine is superior. When cutting and threading, be gentle but firm. Having a few extra pieces on hand can save you stress.
  • Don’t Overcrowd Skewers: Leave a little space between ingredients for a polished look and to make them easier to eat. Also, ensure there’s a small portion of the skewer free at the bottom to act as a handle.
  • Make Vinaigrette Ahead: The Greek vinaigrette can be prepared 2-3 days in advance and stored in the refrigerator. This allows the flavors to deepen and saves you time on the day of serving.
  • Mind the Drizzle Timing: Always drizzle the vinaigrette just before serving. Drizzling too early can cause the vegetables to soften and the feta to absorb too much moisture, impacting the texture.
  • Explore Variations: Feel free to customize your skewers! Add small cubes of green bell pepper, thinly sliced red onion, or even a leaf of fresh basil or mint for an extra layer of flavor and color. For a heartier bite, consider adding grilled chicken or shrimp.
  • Serving Temperature: These skewers are best served at room temperature or slightly chilled. If they’ve been refrigerated, let them sit out for 10-15 minutes before serving for optimal flavor.

Greek Salad Skewers are wonderfully versatile and pair beautifully with a variety of other small bite appetizers, especially those with contrasting colors, textures, and flavors. Description

Greek salad on a skewer with tomatoes, olives, cucumbers, and feta cheese. Drizzled with a tasty Greek vinaigrette. It’s a perfect appetizer or light side dish for any occasion.

Ingredients

Scale

  • 12 grape or cherry tomatoes
  • 6 – 8 oz. whole block of feta in brine, cut into 12 (¾ – 1 inch) cubes
  • 12 whole Kalamata olives, pitted
  • 3–4 mini cucumbers (Persian), cut into ½-inch thick rounds
  • Fresh minced parsley, for garnish, optional
  • 12 (6-inch) bamboo skewers

Vinaigrette

  • 2 Tbsp. olive oil
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. fresh lemon juice
  • 1 garlic clove, minced
  • ¼ tsp. dried oregano
  • Kosher salt and fresh ground black pepper

Instructions

  1. In a small bowl, whisk together the vinaigrette ingredients. Season with salt and pepper to taste. Set aside at room temperature while you prepare the skewers.
  2. To assemble the skewers, thread one tomato, feta cube, olive, and cucumber slice onto the skewer. Transfer to a serving platter. (When threading on the feta, hold it tightly between your fingers to avoid it cracking and/or breaking. I usually like to have a few extra cubes of feta in case some do break). Repeat until you have a total of 12 skewers.
  3. Right before serving, drizzle the skewers with the vinaigrette. If desired, garnish with parsley and season with additional salt and pepper.

Notes

  • Make Ahead: These skewers can be stored in the refrigerator for a short time (1-2 hours) before serving. Do not drizzle with vinaigrette if storing in the refrigerator. Instead, drizzle with vinaigrette right before serving. The vinaigrette can be made a few days in advance and kept refrigerated until ready to serve.
