Butternut Squash Lentil Chili: The Star Ingredients

One of the best aspects of this butternut squash and lentil chili is its reliance on a thoughtful combination of easy-to-find fresh ingredients, convenient canned goods, and everyday pantry items. You won’t need to hunt for obscure components; everything on this list is readily available at your local grocery store.

  • Olive Oil: The foundation for sautéing our aromatics.
  • Onion: Provides a sweet and savory base flavor.
  • Garlic: Adds an essential pungent depth to the chili.
  • Yellow Bell Pepper: Contributes a mild sweetness and vibrant color.
  • Lentils: The heart of this chili; use brown or green varieties for the best texture.
  • Spices: A powerful blend of chili powder, cumin, and oregano creates that signature chili flavor, complemented by a bay leaf for depth.
  • Canned Diced Tomatoes: Adds body, acidity, and rich tomato flavor. I recommend no-salt-added to control seasoning.
  • Chicken Stock or Vegetable Stock: The liquid base that brings all the flavors together. Use vegetable stock for a fully vegan chili.
  • Butternut Squash: Diced into cubes, it offers a wonderful sweetness and creamy texture as it cooks down.
  • Beans: Red kidney beans are traditional, but black beans or pinto beans are also excellent choices.
  • Kosher Salt and Fresh Black Pepper: Essential for seasoning to taste and balancing the flavors.

What Are Lentils and How Do You Cook Them?

Before we delve into the cooking steps, let’s take a moment to appreciate lentils, because they are truly a nutritional all-star and a fantastic addition to any diet, especially in a hearty chili like this.

Lentils are edible legumes, placing them in the same family as beans, peas, and chickpeas. They are celebrated for being incredibly rich in fiber and an excellent source of plant-based protein. Not only are they packed with nutrients, but they are also very affordable and cook remarkably easily, making them a pantry essential.

You’ll find lentils in a delightful variety of colors, including brown, green, yellow, red, and black. For this butternut squash lentil chili, I highly recommend sticking to the green or brown varieties. These are the most common types found in grocery stores and are ideal for chili because they tend to hold their shape well during the simmering process, contributing to that satisfying, chunky texture.

Some lentil recipes might call for pre-soaking, but for this particular butternut squash lentil chili, there is absolutely no need to soak them. They cook beautifully from dry, becoming tender in about 20-30 minutes of simmering. And if you happen to overcook them slightly, don’t fret! A little mushiness is perfectly acceptable, even desirable, in a chili recipe, as it adds to the thick, creamy consistency. In fact, I personally prefer them a bit on the softer side when they’re in a chili.

Crafting Your Hearty Lentil Chili: A Step-by-Step Guide

Making this flavorful butternut squash lentil chili is a straightforward process, perfect for both seasoned cooks and beginners. Follow these simple steps for a truly delicious result:

For a detailed list of ingredients and precise measurements, please refer to the recipe card below.

  1. Sauté the Aromatics: Begin by heating the olive oil in a large Dutch oven or a heavy-bottomed stockpot over medium heat. Add your chopped onions and bell pepper, stirring occasionally. Cook these for about 5-6 minutes, or until they just start to soften and become translucent. Next, stir in the minced garlic and cook for another 30 seconds until it becomes wonderfully fragrant, being careful not to burn it.
  2. Toast the Spices: Once your aromatics are ready, add the dry lentils (rinsed), chili powder, cumin, and oregano to the pot. Season generously with kosher salt and fresh black pepper. Stir continuously for about 1 minute, allowing the spices to toast lightly and release their incredible aromas. This step is crucial for building deep flavor.
  3. Simmer with Tomatoes and Stock: Pour in the canned diced tomatoes (undrained), add the bay leaf, and then pour in the chicken or vegetable stock. Stir everything together. Bring the mixture to a gentle simmer, then reduce the heat to low. Partially cover the pot and let it simmer for 15-20 minutes, or until the lentils are tender around the edges but still have a slight firmness when bitten. You’ll notice the liquid will also reduce slightly, concentrating the flavors.
  4. Lentils and sautéed vegetables simmering in a Dutch oven, capturing the early stages of chili preparation.
  5. Add Butternut Squash: Now, stir in the cubed butternut squash. Continue to simmer the chili for another 15 minutes, or until the squash is tender when pierced with a knife. This is a good moment to taste the chili and adjust the seasoning. You might find it needs a little more salt to perfectly balance the sweetness of the squash and the earthiness of the lentils.
  6. Finish with Beans and Serve: Finally, stir in the rinsed red kidney beans. Cook for just 2-3 minutes, or until the beans are thoroughly heated through. Double-check the butternut squash to ensure it’s knife-tender. Carefully remove and discard the bay leaf. Your vibrant, hearty butternut squash lentil chili is now ready to be served warm with your favorite toppings!

Elevate Your Chili: Flavorful Add-Ins and Toppings

One of the joys of making chili is the ability to customize it to your heart’s content. Here are some fantastic add-ins to deepen the flavor of your butternut squash lentil chili as it simmers, and an array of toppings to finish it off with a flourish.

Boost Your Chili’s Flavor with These Add-Ins:

  • Diced Green Chiles: For a mild, earthy heat without too much spice.
  • Corn: Adds a pop of sweetness and texture.
  • Fire-Roasted Tomatoes: If you want to intensify the tomato flavor and add a smoky nuance, swap regular diced tomatoes for fire-roasted ones.
  • Fresh Jalapeño: Thinly sliced or minced for a fresh kick of heat.
  • Fresh Lime Juice: A squeeze at the end brightens all the flavors.
  • Something Smoky: Incorporate smoked paprika for a subtle, earthy smokiness, or a small amount of chipotle peppers in adobo sauce (minced) for a bolder, spicier, and truly rich smoky flavor.
  • Chopped Fresh Cilantro: Stirred in just before serving, it adds a burst of freshness.
  • Pinch of Red Chili Flakes: If you desire an extra layer of heat.

The Ultimate Toppings Bar for Serving Your Squash Chili

While this chili is incredibly satisfying on its own, a selection of toppings can transform it into an even more exciting and personalized meal. I personally love anything spicy, so I always make sure to have something on hand to give my chili an extra kick. You can serve the chili as is, or with any combination of the following:

  • Fresh Cilantro: Chopped for a bright, herbaceous finish.
  • Green Onions: Sliced for a mild onion flavor and fresh crunch.
  • Tortilla Chips: Crumbled on top for a delightful textural contrast and salty bite.
  • Sour Cream or Greek Yogurt: A dollop adds a creamy, cooling element, perfect for balancing the spices.
  • Avocado: Diced or sliced, it provides a rich, buttery texture and healthy fats.
  • Shredded Cheese: Cheddar, Monterey Jack, or a Mexican blend melts beautifully and adds a savory richness.
  • Red Onions: Finely diced for a sharper, zesty bite.
  • Something Spicy: A sprinkle of red chili flakes, a dash of cayenne pepper, or thinly sliced jalapeño (fresh or pickled) for those who love extra heat.

Chef’s Tip: Create a toppings bar when serving a crowd! Lay out all the options and let everyone customize their bowl to perfection.

Storage and Meal Prep Tips for Butternut Squash Lentil Chili

This butternut squash lentil chili is not only delicious freshly made, but it’s also fantastic for meal prepping, as it tastes even better the next day! Here’s how to properly store your leftovers:

Storing Leftovers in the Refrigerator:

Once cooled, transfer any leftover chili to an airtight container. It will keep beautifully in the refrigerator for 3-4 days. This makes it a perfect make-ahead meal for busy weekdays.

Freezing for Future Feasts:

For longer storage, this chili freezes exceptionally well. Allow the chili to cool completely before transferring it to freezer-safe containers or heavy-duty freezer bags. Be sure to leave a little headspace if using containers to account for expansion during freezing. It can be stored in the freezer for up to 3 months.

When you’re ready to enjoy it again, simply thaw your chili in the refrigerator overnight. Once thawed, you can reheat it in a pot on the stovetop over medium heat, stirring occasionally until warmed through. For individual portions, the microwave works perfectly; warm in 30-second intervals, stirring in between, until piping hot.

Ingredients

Units

Scale

  • 2 Tbsp. olive oil
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 1 large yellow bell pepper, chopped
  • 2 cups dry lentils, rinsed
  • 3 tsp. chili powder
  • 2 tsp. cumin
  • 2 tsp. oregano
  • 2 (14.5 oz.) cans no-salt diced tomatoes
  • 1 dry bay leaf
  • 7 cups chicken stock or vegetable stock
  • 3 cups cubed butternut squash
  • 2 (15 oz.) cans red kidney beans, rinsed
  • Kosher salt and fresh black pepper

Optional for Serving:

  • Cilantro
  • Avocado
  • Red onions
  • Sour Cream
  • Something spicy (e.g., jalapeño, chili flakes)

Instructions

  1. In a 6-quart heavy duty stockpot or Dutch oven, heat olive oil over medium heat. Add onions and bell pepper. Cook for 5-6 minutes or just until the vegetables begin to soften. Stir in garlic and cook for 30 seconds or until fragrant.
  2. Add lentils, chili powder, cumin, and oregano. Season to taste with salt and pepper, and cook for about 1 minute, stirring nonstop.
  3. Add tomatoes, bay leaf and stock. Bring to a simmer, reduce heat to low and simmer partially covered for 15-20 minutes or until lentils are soft around the edges but firm to bite. Liquid will also slightly reduce.
  4. Add butternut squash and continue to simmer for 15 minutes. You might also want to taste for salt here and add more, if needed.
  5. Stir in beans and cook just until heated through, about 2-3 minutes. Check squash for doneness. It should be knife tender. Discard the bay leaf and serve with toppings of choice.

Notes

  • Lentils: I like to use brown or green varieties of lentils. They’re the most basic type of lentils and easy to find at the store, holding their shape well in chili.
  • Tomatoes: I prefer to use no-salt diced tomatoes as I like to control the amount of salt I add to the chili. You can certainly use salted tomatoes, just be mindful of how much additional salt you add.
  • Beans: Feel free to swap out red kidney beans for pinto or black beans to suit your preference.
  • Extra Add-Ins: This chili is very versatile! You can add more flavor with any of these during cooking: diced green chiles, corn, fire-roasted tomatoes, fresh jalapeño, and something smoky such as smoked paprika or chipotle peppers in adobo sauce.
  • Leftovers: Leftover chili can be refrigerated in an airtight container for up to 5 days, making it perfect for meal prep.
  • Freezing Instructions: Transfer cooled chili to a freezer-safe container or bag and freeze for up to 3 months. Thaw overnight in the refrigerator, then reheat on the stovetop over medium heat until warmed through.
