Why You’ll Fall in Love with This Summer Chili

After experimenting with countless chili recipes, I can confidently say this Summer Vegetable Chili stands out. It perfectly encapsulates the warmth and richness needed to bid farewell to summer and joyfully greet the fall season. Here’s why this recipe deserves a permanent spot in your culinary rotation:

  • Veggie-Packed Goodness – This chili is a celebration of seasonal vegetables. Utilizing summer zucchini, yellow squash, and bell peppers means you’re cooking with ingredients at their absolute freshest and most flavorful. Not only does this enhance the taste, but it also boosts the nutritional value, making every spoonful a healthy delight. It’s an excellent way to get a variety of vitamins and fiber into your diet, perfect for a vibrant and energetic lifestyle.
  • Incredibly Versatile – One of the best aspects of this chili is its adaptability. While it shines with summer produce, the core recipe is incredibly flexible. As seasons change, you can easily swap out ingredients to match what’s fresh and available. Think hearty butternut squash or sweet potatoes for a delicious autumn version, or even corn and green beans in late spring. This versatility ensures you can enjoy a delicious chili all year round, always making the most of seasonal bounty.
  • Wholesome and Comforting – There’s something inherently comforting about a big bowl of chili, and this recipe is no exception. It’s a meal that brings families together, reminiscent of our beloved Leftover Turkey Chili. Each ingredient contributes to a robust and satisfying texture, offering a comforting warmth without feeling heavy. It’s perfect for a weeknight dinner or a relaxed weekend gathering.
  • Kid-Friendly Flavors – While this summer squash chili features a gentle kick from jalapeño, the heat level is easily adjustable to suit even the pickiest eaters. You can dial down the spice for younger palates, making it a healthy and delicious option that the whole family will enjoy. Introduce them to the wonderful world of vegetables in a dish they’ll truly love.

Key Ingredients for a Standout Summer Chili

Crafting the perfect chili starts with selecting quality ingredients. Here’s a closer look at what makes this recipe truly special:

  • Crispy Bacon – While this is a “vegetable” chili, a small amount of high-quality bacon adds an incomparable depth of smoky flavor and a rich, savory foundation. I highly recommend organic, thick-cut, applewood smoked bacon for its superior taste and the flavorful rendered fat it provides, which forms the perfect base for sautéing your vegetables. (For a vegetarian or vegan version, see our “Recipe Tips” section below.)
  • Fresh, Seasonal Vegetables – The stars of this chili are undoubtedly the vibrant summer vegetables. We use zucchini, yellow squash, and bell peppers (both yellow and red for a colorful medley). These tender vegetables cook down beautifully, absorbing all the rich flavors of the chili. A touch of jalapeño adds a mild, refreshing heat. Feel free to customize with other favorites like sweet corn, finely diced carrots, or celery for added texture and sweetness.
  • Fire-Roasted Tomatoes – A Must-Have! – Do not underestimate the power of fire-roasted tomatoes in this recipe. Unlike regular diced tomatoes, they bring a distinct, delicious smoky char flavor that elevates the entire dish, giving it a complexity that mimics slow-cooked meat. This ingredient is truly the secret weapon for that authentic chili depth.
  • Hearty Beans – For a satisfying and protein-packed chili, pinto beans and black beans are essential. They provide a creamy texture and substantial body, making the chili incredibly filling. Whenever possible, opt for organic beans without added preservatives – just plain and simple goodness. Always remember to drain and rinse your canned beans thoroughly to remove excess sodium and improve digestibility.
  • Aromatic Spices – The combination of rich chili powder and earthy ground cumin is crucial for developing the classic chili flavor profile and enhancing the smokiness from the fire-roasted tomatoes. A pinch of kosher salt and fresh black pepper will balance all the flavors beautifully.

Effortless One-Pot Summer Chili: Step-by-Step

One of the many joys of this recipe is that it all comes together in a single pot, making cleanup a breeze. Once your vegetables are prepped, the cooking process is quick and straightforward, allowing you more time to savor the delicious results.

  1. Render the Bacon – Begin by heating a large Dutch oven or a heavy-bottomed stockpot over medium heat. Add your chopped bacon and cook it slowly until it becomes crispy and has rendered its fat, usually about 3-4 minutes. This flavorful bacon fat will be the foundation of your chili. Carefully remove the cooked bacon with a slotted spoon and set it aside, leaving the rendered fat in the pot.
  2. Sauté the Fresh Vegetables – Into the same pot with the bacon fat, add the chopped onion, zucchini, yellow squash, both bell peppers (yellow and red), and minced garlic. Cook these aromatic vegetables, stirring occasionally, until they begin to soften and become fragrant, which typically takes about 8-10 minutes. This step develops a rich flavor base for the chili.
  3. A vibrant mix of chopped onions, zucchini, yellow squash, bell peppers, and garlic sautéing in a large soup pot, creating the aromatic base for the chili.
Sautéing the colorful vegetables to build flavor.
  4. Incorporate Remaining Ingredients – Now, it’s time to bring all the chili components together. Add the fire-roasted diced tomatoes, tomato sauce, chicken stock, drained and rinsed pinto and black beans, finely chopped jalapeño, chili powder, and ground cumin to the pot. Stir everything well to combine, ensuring all ingredients are evenly distributed. Season generously with salt and pepper to taste.
  5. Simmer to Perfection – Once all ingredients are in, cover the pot and bring the chili to a gentle simmer. Once simmering, reduce the heat to low and continue to cook, covered, for at least 30 minutes, or until all the vegetables are tender and the flavors have had a chance to meld beautifully. The longer it simmers, the deeper the flavor will become.
  6. Finishing Touch and Serve – Just before serving, stir in the fresh chopped cilantro. Taste the chili and adjust seasonings as needed, adding more salt, pepper, or a pinch more chili powder if desired. For the best flavor, allow the chili to rest off the heat for 15-20 minutes before serving; this allows the flavors to deepen and settle. As with most chilis, it tastes even better the next day!

Can I Make This Chili in a Slow Cooker?

Absolutely! This recipe adapts wonderfully to a slow cooker for a more hands-off approach. First, follow the initial steps to cook the bacon in a separate pan to render the fat and achieve that delicious crispness. Then, simply transfer the cooked bacon (if using) and all the remaining ingredients (onion, zucchini, squash, bell peppers, garlic, tomatoes, beans, stock, jalapeño, and spices) into your slow cooker. Cook on high for 2-3 hours or on low for 4-6 hours, or until the vegetables are tender and the flavors are fully developed. This method is perfect for busy days, allowing you to come home to a warm, ready-to-eat meal.

Customizing Your Summer Chili: Delicious Substitutions

This seasonal chili recipe is incredibly forgiving and easy to adapt to your preferences or what you have on hand. While the core ingredients create a hearty and wholesome dish with delightful summer vibes, don’t hesitate to experiment with these simple substitutions:

  • Tomatoes – While fire-roasted diced tomatoes are highly recommended for their unique smoky depth, you can certainly use other varieties if preferred. Regular diced tomatoes will work in a pinch, though you might miss a bit of that charred flavor. For a smoother chili, crushed tomatoes can be used, or add a teaspoon of smoked paprika to boost the smokiness.
  • Beans – This recipe leans into a Southwestern-style chili profile, making pinto beans and black beans staples. However, feel free to switch things up! Kidney beans are a classic chili choice and add robust texture. For a milder flavor, try cannellini (white kidney) beans or great northern beans. You could also mix in chickpeas for an unexpected twist and added protein.
  • Vegetables – The beauty of this chili is its adaptability to various vegetables. Beyond zucchini, yellow squash, and bell peppers, consider adding other seasonal delights. Eggplant chunks absorb flavors wonderfully, while corn kernels add a burst of sweetness. Diced carrots and celery can contribute additional depth and nutrition. You truly can never have too many vegetables in chili, making it a perfect dish to clean out your produce drawer. Don’t forget, vegetable kitchen scraps also make the best homemade vegetable broth!
  • Meat Options – If you want to add more protein, cooked ground turkey, ground beef, or shredded chicken can be stirred in along with the beans and tomatoes. Ensure any added meat is fully cooked before combining with the chili to maintain ideal cooking times.

Top Tips for the Best Summer Chili

Ensure your Summer Vegetable Chili is nothing short of perfect with these helpful tips:

  • Excellent for Leftovers. This recipe yields a generous pot of chili, making it ideal for meal prepping or enjoying throughout the week. Store it in an airtight container in the refrigerator for up to 4-5 days. In fact, like many chilis, the flavors deepen and meld beautifully over time, often tasting even better on the second or third day!
  • Allow for Resting Time. For optimal flavor and texture, resist the urge to dive in immediately. If serving the same day, let the chili rest, covered, for 15-20 minutes after simmering. This allows the ingredients to settle and the flavors to fully develop. Better yet, make it the day before you plan to serve it; a night in the fridge works wonders for its deliciousness.
  • Don’t Skip the Toppings! – Toppings are arguably one of the best parts of any chili experience, allowing everyone to customize their bowl. We adore fresh scallions for a mild oniony bite, shredded cheese (cheddar or Monterey Jack are great choices) for creamy meltiness, a dollop of cool sour cream to balance the heat, and creamy avocado slices for richness. Other great options include crispy tortilla strips, fresh cilantro, or a squeeze of lime juice.
  • Make it Vegan. To easily transform this into a delicious vegan chili, simply omit the bacon entirely and use vegetable broth or stock instead of chicken stock. The fire-roasted tomatoes and spices will still provide plenty of smoky, rich flavor, making it a satisfying plant-based meal.

Perfect Pairings: What to Serve with Your Summer Chili

Transform this veggie-packed chili, with its hint of bacon, into a complete and well-rounded meal by pairing it with a delicious side dish. Here are some fantastic options:

  • Fresh Salads: A crisp, light salad provides a wonderful contrast to the rich chili. Consider a summer-inspired zesty corn salad with lime dressing or a refreshing strawberry avocado spinach salad with poppyseed dressing.
  • More Veggies: Because you really can’t have enough vegetables! Complement the chili with a side of perfectly roasted broccoli with bacon, pine nuts, and parmesan, or simple steamed green beans.
  • Hearty Breads: Scoop up every last drop of chili with warm, crusty bread. Classic cornbread is a must, but equally delicious options include sourdough garlic bread, light and fluffy gluten-free cheese popovers, or savory zucchini and corn fritters.
  • Potato Sides: For a comforting and substantial pairing, consider crispy baked potato fries with avocado dip, flavorful chili-roasted sweet potato wedges with avocado Greek yogurt aioli, or a simple, fluffy baked potato.

Creative Ways to Enjoy Leftover Summer Chili

Making a large pot of chili is a smart move, as leftovers are often even more delicious! Beyond simply reheating and enjoying, here are some creative ways to transform your extra summer vegetable chili into exciting new meals:

  • Deconstructed Taco Salad – Build a fresh and vibrant taco salad base with crisp lettuce, diced fresh tomatoes, and crunchy tortilla strips. Top generously with your warmed leftover summer chili and a sprinkle of shredded cheese. Add your favorite taco salad toppings like creamy avocado, a dollop of sour cream, or freshly chopped red onions for a satisfying and easy lunch or dinner.
  • Hearty Veggie Chili Burritos – Warm up your chili and, if it’s too thin for burritos, gently simmer it down in a pot until it thickens to your desired consistency. Spoon the thickened chili onto warm tortillas, then add fresh lettuce, a dollop of sour cream, and finely diced tomatoes. Roll them up for a portable and flavorful meal that’s perfect for lunchboxes or a quick dinner.
  • Chili Loaded Baked Potatoes – Take your baked potato game to the next level! Split open a fluffy baked potato, fluff the insides, and then generously stuff it with your warm veggie bacon chili. Slather with plenty of melted cheddar cheese and a spoonful of cool sour cream for an ultimate comfort food experience that’s both filling and incredibly tasty.

Storing Your Summer Vegetable Chili

Proper storage ensures you can enjoy the deliciousness of this chili for days to come.

Store any leftover chili in an airtight container in the refrigerator for up to 5-7 days. As mentioned, this is one of those fantastic recipes that often improves with time, allowing the flavors to deepen and meld even further.

Can I Freeze Chili?

Absolutely! Chili freezes exceptionally well, making it perfect for future quick meals. Once the chili has cooled completely to room temperature, transfer it to freezer-safe containers or heavy-duty freezer bags. Be sure to leave a little headspace if using containers to allow for expansion during freezing. You can store frozen chili for up to 3 months. When ready to enjoy, thaw overnight in the refrigerator and then reheat gently on the stovetop or in the microwave until warmed through.

Meal Prep Made Easy – This summer vegetable chili is excellent for meal prepping. Divide individual servings into airtight meal prep containers and store them in the refrigerator for up to 5 days. Reheat conveniently in the microwave until warm. Serve with a fresh side salad or a slice of crusty bread for a quick, healthy, and satisfying lunch or dinner throughout your busy week.

Ingredients

  • 3 bacon strips, chopped
  • 1 medium onion, chopped
  • 12 oz. zucchini, chopped (2 cups)
  • 12 oz. yellow squash, chopped (2 cups)
  • 1 each medium yellow and red bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 (14.5 oz.) cans fire-roasted diced tomatoes
  • 1 (15 oz.) can tomato sauce
  • 2 cups chicken stock (or vegetable stock for vegan)

  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 jalapeno, seeded and finely chopped
  • 3 Tbsp. chili powder
  • 2 tsp. ground cumin
  • ¼ cup fresh chopped cilantro
  • Kosher salt and fresh black pepper, to taste

To Serve

  • Sour cream
  • Shredded cheddar cheese
  • Sliced green onions
  • Diced or sliced avocado

Instructions

  1. Heat a large Dutch oven or stockpot over medium heat. Add bacon and cook until bacon renders its fat and begins to brown, about 3-4 minutes. Remove bacon and set aside (optional, for garnish or topping).
  2. Add the onion, zucchini, yellow squash, both bell peppers, and garlic to the pot; cook until the vegetables begin to soften, about 8-10 minutes.
  3. Next, add the diced tomatoes, tomato sauce, chicken stock, beans, jalapeño, chili powder, and cumin. Season with salt and pepper, to taste. Cover and bring the chili to a simmer. Reduce heat to low and simmer, covered, for 30 minutes, or until the vegetables are tender.
  4. Stir in cilantro and taste for salt and pepper before serving. For best results, let the chili stand for 15-20 minutes before serving. It tastes even better the next day!

Notes

  • Bacon: Depending on the cut and brand of bacon used, you may have to add an additional 1-2 Tablespoons of olive oil to the bacon grease before adding in the vegetables to ensure enough fat for sautéing.
