Basil Pesto Vinaigrette

  • ¼ cup Easy Homemade Basil Pesto, at room temperature (see note below about using store pesto)*
  • 1 Tbsp. finely chopped walnuts
  • 1 Tbsp. finely chopped almonds
  • 1 Tbsp. fresh lemon juice
  • 1 Tbsp. extra-virgin olive oil

Instructions

  1. Place trimmed beets in a medium saucepan; cover with water and cook over medium/low heat until knife tender, about 20-25 minutes. Cool completely. Peel the beets and cut into matchsticks.
  2. Toss the beets, radishes, and cucumber with the basil vinaigrette. Season with salt and pepper, to taste. Serve immediately (see note below).**

  1. Whisk all vinaigrette ingredients together until well combined. Serve immediately.

*I rigorously tested this recipe with store-bought pesto, and it completely altered the taste! Commercial pestos are typically much saltier and possess a higher acidity than their homemade counterparts, which severely impacted the salad’s intended flavor profile. For the best culinary experience, I enthusiastically recommend preparing your own pesto from scratch.
**This salad truly shines when served immediately, while the vegetables maintain their optimal crispness and refreshing crunch. Should you desire a super chilled salad, my suggestion is to individually chill the julienned vegetables before combining them with the vinaigrette just moments prior to serving. This technique ensures maximum crispness and a perfectly cool temperature.
