Brownie Layer

  • 1 cup cane or granulated sugar
  • 1 cup packed brown sugar

  • ¾ cup all-purpose flour, spooned and leveled
  • 1 cup unsweetened natural or Dutch-process cocoa powder
  • ½ tsp. kosher salt

Raspberry Layer

  • ¼ cup fresh raspberry puree (about 3 oz. fresh whole raspberries)
  • 8 oz. block cream cheese, at room temperature
  • ⅓ cup cane or granulated sugar
  • 1 large egg
  • ½ tsp. pure vanilla extract
  • ¼ tsp. kosher salt
  • 3 Tbsp. all-purpose flour

Optional, for garnish

  • Fresh raspberries
  • Confectioners’ sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Line the bottom and sides of a 9×13 inch pan with parchment paper, leaving an overhang on the sides to easily lift the finished brownies out.
  2. For the Brownie Layer: In a large mixing bowl, combine melted butter, cane sugar, and brown sugar. Beat with an electric mixer until well combined.
  3. Add eggs and vanilla extract. Beat until light and fluffy, about 2-3 minutes.
  4. In a separate bowl, whisk together the flour, cocoa powder, and salt. Add to the wet ingredients and beat on low speed, just until combined, scraping down the sides as needed. Do not overmix.
  5. For the Raspberry Layer: Add fresh raspberries to a food processor and pulse until puree-like consistency. (Alternatively, mash with a fork).
  6. Add softened cream cheese to a mixing bowl and beat with an electric mixer until smooth and creamy, scraping down the sides as needed.
  7. Add sugar, egg, vanilla, salt, and flour to the cream cheese mixture. Beat until light and smooth. With a rubber spatula, fold in the raspberry puree until just combined.
  8. To Assemble: Reserve about ½ cup of the brownie batter in a small bowl. Pour the remaining brownie batter into the prepared pan, smoothing the top evenly.
  9. Carefully pour the raspberry layer over the brownie base, spreading it gently.
  10. Mix the reserved brownie batter with a tablespoon of water until slightly thinned. Dollop this thinned batter on top of the cheesecake layer. Use a knife or skewer to create a swirl pattern. Optional: scatter fresh raspberries over the top.
