Essential Ingredients for Creamy Coconut Shrimp

Selection of fresh ingredients for coconut milk shrimp, including shrimp, coconut milk, garlic, ginger, and lime

Crafting the perfect Creamy Coconut Shrimp begins with selecting high-quality ingredients. Each component plays a crucial role in building the layered flavors that make this dish so irresistible:

  • Shrimp: Opt for large, raw, peeled, and deveined shrimp. If you’re using frozen shrimp, it’s essential to thaw them completely and drain them thoroughly. Pat them very dry with a few sheets of paper towel to remove any excess moisture; this step is crucial for achieving a good sear and preventing a watery sauce.
  • Olive Oil: Used primarily for the shrimp marinade, a good quality olive oil or avocado oil will help infuse the flavors and tenderize the shrimp.
  • Honey: This natural sweetener is vital for balancing the dish’s spicy and tangy notes. Do not omit it, as it contributes significantly to the overall flavor complexity.
  • Aromatics: A powerhouse of flavor, fresh garlic, finely grated ginger, thinly sliced shallots, and vibrant scallions form the aromatic backbone of this dish. They create a fragrant foundation for the sauce.
  • Spices: Red chili flakes provide a customizable kick, allowing you to adjust the heat to your preference. Kosher salt is used to enhance and balance all the flavors.
  • Butter: A small amount of butter is used for both cooking the shrimp and sautéing the aromatics, imparting a rich, savory depth that can’t be replicated.
  • Coconut Milk: The heart of the sauce! Always use unsweetened canned full-fat coconut milk for the best results. Full-fat milk provides the luxurious creaminess and rich flavor necessary for a truly authentic and satisfying sauce. Avoid “lite” coconut milk, which can result in a thinner, less flavorful sauce. For more in-depth tips on choosing the right coconut milk, refer to this post.
  • Fish Sauce: This might seem like an unusual addition, but it’s an absolute must-have ingredient. Fish sauce adds a unique earthy, umami, and savory depth to the sauce without making it taste overtly “fishy.” It’s a secret weapon for achieving complex Southeast Asian-inspired flavors.
  • Lime Zest and Juice: Fresh lime juice and zest are non-negotiable for that essential bright, tangy finish that cuts through the richness of the coconut milk. Always use fresh limes for superior flavor.
  • Cilantro: Fresh chopped cilantro adds a burst of herbaceous freshness as a garnish. If you’re not a fan of cilantro, fresh basil makes an excellent alternative, offering a different but equally delightful aroma.

Crafting Your Perfect Coconut Shrimp with Coconut Milk: A Step-by-Step Guide

Making this incredible Coconut Shrimp with Coconut Milk is surprisingly straightforward, relying on the natural thickening properties of full-fat coconut milk to create a rich, velvety sauce without the need for additional thickening agents. The key is allowing the sauce enough time to gently simmer and reduce. Remember to always use full-fat coconut milk, not coconut cream, for the optimal texture and flavor.

  • Step 1: Marinate the Shrimp – Begin by preparing your shrimp. In a medium-sized bowl, combine the peeled and deveined shrimp with olive oil, a drizzle of honey, minced garlic, grated fresh ginger, a pinch of red chili flakes, and a sprinkle of kosher salt. Toss all these ingredients together thoroughly, ensuring each shrimp is well coated. Let the shrimp marinate at room temperature for a brief but impactful 15 minutes. This short marinating period infuses the shrimp with incredible flavor before cooking.

  • Step 2: Cook the Shrimp – Heat a large non-stick skillet over medium-high heat. Once hot, add 2 tablespoons of butter and allow it to melt until sizzling. Using a pair of tongs, carefully add the marinated shrimp to the hot skillet, arranging them in a single layer. Try to leave any excess liquid from the marinade behind in the bowl. Cook the shrimp for just 1-2 minutes per side, or until they turn pink and opaque on the outside. It’s crucial not to overcrowd the pan; cook the shrimp in batches if necessary to ensure even cooking and a good sear. Remove the cooked shrimp immediately to a clean bowl to prevent overcooking, as they will finish cooking in the sauce later. Any leftover liquid in the pan from the shrimp should be drained before proceeding to the next step.

Pro Tip for Perfect Shrimp: The key to perfectly cooked shrimp is a hot pan and avoiding overcrowding. Make sure your skillet is heated to medium-high until you hear a satisfying sizzle the moment the shrimp touches the surface. Lay the shrimp in a single layer to ensure they sear rather than steam. If you have a lot of shrimp, cook them in batches to maintain the pan’s temperature and achieve that desirable golden-pink hue. Overcooked shrimp quickly become rubbery, so keep a close eye on them!

  • Step 3: Develop the Flavorful Sauce – After removing the shrimp, reduce the heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Once melted, add the finely chopped shallots, the white parts of the sliced scallions, and another pinch of red chili flakes. Sauté these aromatics for a few minutes, stirring frequently, until they become soft, translucent, and wonderfully fragrant, filling your kitchen with an enticing aroma. Pour in the full-fat unsweetened coconut milk and the fish sauce. Stir well to combine all the ingredients, then bring the mixture to a gentle simmer. Allow the sauce to simmer uncovered for approximately 3-5 minutes, stirring occasionally, until it visibly thickens to a creamy consistency. Taste and season with additional salt if needed.

  • Step 4: Combine and Finish – Once the sauce has thickened to your liking, stir in the fresh lime zest and lime juice. These citrus elements add a crucial burst of brightness and acidity that perfectly complements the rich coconut milk. Gently add the previously cooked shrimp back into the skillet with the sauce. Simmer for just a few more minutes, stirring gently, until the shrimp is thoroughly cooked through and heated. Be careful not to overcook the shrimp at this stage, as it can quickly become tough. Finally, stir in the vibrant green parts of the scallions and a generous handful of fresh chopped cilantro for a final flourish of color and herbaceous flavor. Serve immediately and enjoy!

Perfect Pairings: What to Serve with Creamy Coconut Milk Shrimp

The beauty of Creamy Coconut Milk Shrimp lies in its versatility. While it’s utterly delicious on its own, pairing it with the right side dishes can transform it into a truly unforgettable meal. The rich, savory, and slightly sweet sauce is incredible with a variety of accompaniments. Here are some of our top recommendations to make it a complete and satisfying spread:

  • Flavorful Rice Dishes: A classic pairing, rice is perfect for soaking up every drop of that luscious sauce. Consider serving it over Pineapple Rice for a tropical twist, or our fragrant Cilantro Lime Coconut Rice to amplify the existing flavors of the dish. Simple jasmine rice or brown rice also work beautifully.
  • Light and Refreshing Salads: To cut through the richness of the creamy sauce, a crisp salad is an excellent choice. Our creamy and light Greek Cucumber Salad offers a refreshing contrast with its cool, tangy profile. A simple green salad with a citrus vinaigrette would also be wonderful.
  • Creative Carb Alternatives: If you’re looking to switch things up from rice or reduce your carb intake, try serving this shrimp over a creamy base like Cauliflower Mash. Its subtle flavor and smooth texture make it a fantastic, low-carb alternative that still delivers a satisfying mouthfeel.
  • Roasted Vegetables: Add a healthy and flavorful vegetable side. These Roasted Garlic Green Beans provide a tender-crisp texture and a complementary savory flavor that pairs well with the shrimp. Other roasted vegetables like broccoli, asparagus, or bell peppers would also be delicious.
  • Breads for Dipping: Don’t let any of that incredible sauce go to waste! Something hearty and absorbent for dipping is always a good idea. Warm Cheese Bread or classic naan bread are excellent choices, allowing you to savor every last bit of the creamy, flavorful sauce.

Storage and Reheating Tips for Creamy Coconut Shrimp

One of the many advantages of this delicious Creamy Coconut Shrimp is how well it stores, making it perfect for meal prepping or enjoying leftovers. Proper storage and reheating are key to maintaining its exquisite flavor and texture:

Storage: Any leftover coconut lime shrimp should be transferred to an airtight container and promptly refrigerated. When stored correctly, it will last safely in the refrigerator for up to 3 days. Ensure it’s cooled down before sealing to prevent condensation.

Reheating: For the best results and to preserve the tender texture of the shrimp, we highly recommend reheating this dish on the stove-top. Transfer the desired portion to a non-stick skillet or saucepan and reheat over medium-low heat, stirring frequently. This gentle method allows the sauce to warm through evenly without overcooking the shrimp, which can easily become rubbery if exposed to high, uneven heat.

We do not recommend reheating Coconut Milk Shrimp in the microwave. The microwave tends to reheat food unevenly, and shrimp is particularly susceptible to becoming tough and rubbery when subjected to its intense, localized heat. Taking a few extra minutes to reheat it on the stove will ensure your leftovers are just as delicious as the freshly cooked meal.

Description

Succulent shrimp simmered in a luscious, spicy-sweet coconut milk sauce, brightened with fresh garlic, ginger, pepper flakes, and zesty lime juice. This incredibly flavorful one-pan meal is perfect over cooked rice and comes together in just 30 minutes!

Ingredients

For the Shrimp

  • 1 pound peeled and deveined large shrimp, pat dried with a paper towel
  • 1 Tbsp. olive oil or avocado oil
  • 2 Tbsp. honey
  • 3 garlic cloves, minced
  • 1 Tbsp. freshly grated ginger
  • ¼ tsp. red chili flakes
  • ¼ tsp. kosher salt
  • 2 Tbsp. butter for cooking shrimp

For the Sauce

  • 2 Tbsp. butter
  • 1 medium shallot, finely chopped
  • 2 scallions, thinly sliced, white and green parts separated
  • ¼ tsp. red chili flakes
  • 1 (14 oz.) can unsweetened full-fat coconut milk (not lite)
  • 1 Tbsp. fish sauce
  • Zest 1 lime
  • 1 Tbsp. fresh lime juice, about ½ lime
  • Fresh chopped cilantro, for garnish
  • Kosher salt, to taste

Instructions

Preparing the Shrimp

  1. In a bowl, combine the shrimp with olive oil, honey, minced garlic, grated ginger, red chili flakes, and salt. Toss everything together to ensure the shrimp is evenly coated. Set aside to marinate at room temperature for 15 minutes.
  2. Melt 2 tablespoons of butter over medium-high heat in a large non-stick skillet. Once the butter is hot and shimmering, add the marinated shrimp to the skillet using tongs, leaving any excess marinade liquid behind in the bowl (and discard it). Cook the shrimp for 1-2 minutes per side, or until they turn pink and opaque. Immediately remove the cooked shrimp to a clean bowl. The shrimp will still be slightly undercooked in the center; they will finish cooking in the sauce. If there’s any liquid remaining in the pan after cooking the shrimp, drain it before proceeding.

Creating the Sauce

  1. Reduce the heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Once melted, add the finely chopped shallots, the white parts of the scallions, and another ¼ teaspoon of chili flakes. Sauté for a few minutes until the shallots are soft and fragrant. Stir in the full-fat coconut milk and fish sauce. Bring the mixture to a gentle simmer and season with salt to taste. Let it simmer, stirring occasionally, for about 3-5 minutes, allowing the sauce to reduce and thicken naturally.
  2. Stir in the fresh lime zest and lime juice into the thickened sauce. Return the partially cooked shrimp to the skillet. Continue to simmer for just a few minutes, stirring gently, until the shrimp is fully cooked through and heated. Be careful not to overcook the shrimp, as it can become tough quickly. Finally, stir in the green parts of the scallions and fresh chopped cilantro. Serve immediately.
