Vegan Banana Cinnamon Muffins

  • 1 1/2 cups almond milk
  • 1 tsp apple cider vinegar
  • 1 1/2 cups flour
  • 1/4 cup rolled oats
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • pinch of salt
  • 2 large bananas (ripe, mashed)
  • 1 tsp vanilla extract
  • 1/3 cup coconut oil, softened
  • 1/2 cup coconut sugar (use 3/4 if you like a sweeter muffin)

Topping Crumble:

  • 1/4 cup pecans, crushed
  • 3 tsp coconut sugar

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a small bowl, combine almond milk and apple cider vinegar. Let sit for 5-10 minutes until it curdles, creating a “vegan buttermilk.”
  3. In a large bowl, whisk together the flour, rolled oats, baking powder, cinnamon, and a pinch of salt.
  4. In a separate medium bowl, mash the ripe bananas. Add the softened coconut oil, coconut sugar, vanilla extract, and the curdled milk mixture. Stir until well combined.
  5. Pour the wet banana mixture into the dry flour mixture. Stir gently with a wooden spoon or spatula just until combined. Be careful not to overmix, as this can lead to tough muffins. A few lumps are perfectly fine.
  6. In a small separate bowl, prepare the crumble topping by combining the crushed pecans and coconut sugar.
  7. Line a 12-cup muffin pan with paper liners. Spoon the muffin batter evenly into each liner.
  8. Generously sprinkle the pecan and sugar crumble mixture evenly on top of each muffin.
  9. Bake for 26-30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
